A butter croissant should shatter. The crust cracks under your thumb, audible in a quiet kitchen, and the interior pulls apart in honeycombed sheets that still hold the memory of cold butter folded into dough. At Vogue Cafe in Steveston Village, they come out of the oven through the morning and sit on the pass beside the espresso machine — plain, chocolate, or both. You take one to a patio table with a latte ($6) and the day starts properly.
What makes a croissant worth the detour
Lamination is the only thing that matters. Butter block, dough, fold, rest, repeat. Three double turns minimum. The butter must stay solid between layers until the oven hits it; then steam lifts each leaf and the crust sets golden. If the butter leaks during the turns, you get brioche texture — soft, rich, but no shatter. If the dough warms too fast, layers fuse. A good croissant is a record of temperature discipline.
Vogue's are made in-house. You can see the tray from the counter. The plain croissant ($4) shows even honeycomb, deep colour at the ridges, pale butter scent rising when you tear it. Walk in at 10:30am when doors open. The first batch is usually out. Ask for "a butter croissant and a latte" — the barista pulls a double shot, textures milk to wet-paint gloss, pours into a wide cup so the crust can rest on the rim while you sip. Cappuccino ($6) if you want more foam, less milk. Americano ($5) if you want the croissant to lead.
Sit at the covered side patio. Red-checkered tablecloths, greenery walls, dog bowl by the door. Morning light comes sideways off No 1 Rd. The boardwalk and Garry Point Park are a flat walk after. If the patio is full, the dining room has deep-red walls and wood tables; the bar holds a few stools for solo coffee.

A baker's note on storage
Croissants die in a paper bag. The crust softens in twenty minutes. Eat them at the table. If you must take one home, reheat at 350°F for four minutes on a rack — microwave kills the shatter. Freeze only if you'll reheat from frozen same way. The butter structure survives one freeze; twice and it's toast.
